Enzymes are proteins that help speed up our metabolism. They build some substances and break others down. All living things have enzymes.

Describing what enzymes do can be better understood if we liken their function to building a house.

Similarly, enzymes are the catalysts that enable all cells in your body do their job. Among other body functions, enzymes catalyze the breakdown of your food into the nutrients you need for life.
Did you ever wonder why canned, boxed and other processed foods have a very long shelf life? They last for a very long time because the enzymes have been removed. The heat of preparation kills all of the natural enzymes in these foods. (Otherwise they would rot pretty quickly.) There is no energy and no life force in prepared and cooked foods. They are dead foods. So when you eat prepared and cooked foods they will sit in your stomach until the workmen show up.
Enzymes Are Essential
Enzymes are essential for digestion because without enzymes there can be no digestion.
Fortunately, we are born with an enzyme bank account. When we eat enzyme-depleted, prepared and cooked foods our bodies are forced to
produce the different enzymes necessary to digest whatever dead foods we ate. But, like any bank account, we deplete our natural reserve if we don’t make regular deposits. So it is with the continuous depletion of our natural ability to produce enzymes for food digestion.
Depletion of the reserve results in future health issues given that enzymes are necessary for all body functions, not just digestion.
As we age, our ability to digest foods becomes diminishes. Poor digestion contributes to a host of disorders usually attributed to “old age.” When we no longer can produce enzymes we die.

When we chew our food the enzyme amylase is produced in the mouth and mixed with the food. This is predigestion. If we do not chew long enough (like about 30 times for each mouthful) we have insufficient amylase mixed with the food and predigestion is incomplete when we swallow. So rather than benefitting from predigestion, your food is a partially digested lump in your stomach for about an hour. Stomach acids are insufficient to initiate digestion. Now, the pancreas is stressed because more stomach acid must be produced to compensate for inadequate predigestion.
Now your largely undigested food enters your small intestine. The endocrine system becomes stressed by the need to produce large amounts of enzymes to digest the enzyme-deficient food.
Most of us eat primarily bread, pasta, cooked vegetables, rice, cheese, meat, fish, chips, preserved foods, soda, desserts, candy, TV dinners, and other prepared foods that have no enzymes. The foods we eat are carbohydrates, proteins, fats, and fiber.
