5 Non-Boring, Easy and Healthy Canned Tuna Recipes

Easy Tuna Cakes
Makes about 2 portions 4 cakes
Prep time: 10 minutes | Cook time: 10-20 minutes
Ingredients:
- 12 oz. canned tuna in water
- ¼ cup low-fat mayonnaise or low-fat plain yogurt
- 1 tbsp. dijon mustard
- 1/4 tsp. lemon juice
- 1/4 tsp. ground black pepper
- 1 tsp. chopped fresh dill or herb of choice (optional)
- ½ cup bread crumbs, panko flakes or finely crushed cracker
Directions:
- Drain tuna.
- Mix the tuna to break it apart; leave slightly chunky if desired.
- Add all ingredients except the crumbs and mix until evenly combined.
- Divide the mix into four balls.
- Make into patties and lightly coat with crumbs.
- Cook: If on stove top, heat a sauté pan over medium heat and brown on each side for a few minutes in a small amount of oil or pan spray until hot. If in the oven, spray a baking pan, place the cakes on the pan and bake at 375 degrees for 15-20 minutes.
- Serve with choice of vegetable and sauce.
Easy Greek-Style Tuna Salad Sandwich
Makes 2 portions
Prep Time: 10 minutes | Cook time: 20-30 minutes
Ingredients:
- 12 oz. canned tuna in water
- ¼ cup low-fat Italian or Greek dressing
- 1/3 cup feta cheese crumbled
- 1/3 cup chopped black olives
- 2-4 whole grain tortillas, bread or wrap of your choice
- Optional sandwich condiments: tomato, cucumber, bell pepper, etc
Directions:
- Drain the tuna.
- Add all ingredients except the bread and mix until combined.
- Put on bread or in a wrap.
Easy Tuna Stuffed Portobello
Makes 2 portions
Prep time: 20 minutes | Cook time: 8-12 minutes
Ingredients:
- 2 large or 4 small portobello mushrooms
- Tuna cake or tuna salad mix from above
- 1 tsp. vegetable oil (or pan spray)
- 1 cup marinara sauce
- Salt & pepper
Directions:
- Clean mushrooms by removing the stems and scraping off the dark fins.
- Season both sides with oil or spray, salt and pepper.
- Cook mushrooms over medium heat, covered, for about 3 minutes.
- Remove from pan.
- Add marinara sauce to warm pan and heat on low.
- Top mushrooms with tuna mix.
- Add the stuffed mushrooms to the pan with sauce, cover, and cook on medium heat for about 5 minutes until mushroom is tender and tuna is warm.
- (Optional) Top with cheese and melt under the broiler for about 30 seconds.
Easy Tuna Lasagna Roll
Makes 2 portions
Prep time: 15 minutes | Cook time: 10-15 minutes
Ingredients:
- Tuna cake or salad recipe mix from above
- 4 lasagna noodles (preferably whole grain), slightly undercooked
- 1 1/2 cup marinara sauce
Directions:
- Lay the lasagna noodles flat.
- Divide the tuna mix into four equal portions.
- Add a portion of the mix to each noodle.
- Roll the noodle with the tuna inside.
- Place rolls into a stove top pan. Cover. Add sauce.
- Cook over low to medium heat.
- Simmer for 10-15 minutes
- Serve with a salad or whole grain bread.

Makes 2 portions
Prep Time: 20 minutes | Cook time: 20 minutes
Ingredients:
- 12 oz. canned tuna, drained
- 2 1/2 cups sweet potatoes peeled and grated
- 1/2 cup sliced green onion
- 1 cup fresh or thawed frozen corn kernels (substitute soy beans/shelled edamame for extra protein)
- 1 tsp. lemon juice
- 2 tsp. chopped fresh dill
- 1 cup shredded cheddar, Monterey jack or cheddar jack cheese
- Salt and pepper
Directions:
- Preheat oven to 350.
- Place grated sweet potatoes on a sprayed baking sheet, season with salt and pepper and bake for 10-15 minutes until tender.
- Remove from oven, add to mixing bowl with remaining ingredients and mix until combined.
- Spray the baking pan or muffin tin.
- Add the mix and pat it down.
- Bake for 20 minutes; finish under the broiler for some crispiness.
- Serve with a kale protein salad or garden salad.
