BLT Frittata
Begin by cutting bacon into bite-size pieces. Fry the bacon in a large oven-proof skillet. Add sliced tomatoes to the skillet and cook until tender. Add diced green onions. Whisk together 10 eggs, and pour into mixture. Cook for about three minutes, until the edges of the frittata are almost done. Transfer to the oven and cook on low heat until the frittata is cooked all the way through.
Fajita Frittata
Begin by cutting strips of flank steak into bite-size pieces. Fry the steak in a large oven-proof skillet. Add onions and bell peppers to the skillet and cook until tender. Whisk together 10 eggs, and pour into mixture. Cook for about 3 minutes, until the edges of the frittata are almost done. Transfer to the oven and cook on low heat until the frittata is cooked all the way through.
